Atualmente \u00e9 pesquisador da Embrapa Agroind\u00fastria de Alimentos e atua principalmente em processos de alta press\u00e3o e t\u00e9rmicos aplicados \u00e0 qualidade e seguran\u00e7a de produtos inovadores e com maior sustentabilidade de frutas, c\u00e1rneos, l\u00e1cteos e pescado.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>He has a degree in Food Engineering (1982) and a master&#8217;s degree in Food Science with a focus on Nutrition (1988, State University of Campinas &#8211; Unicamp), a PhD in Food Engineering and Technology (University of Reading, England, 1996) with a postdoctoral degree from Agrosup Dijon (France). He is currently a researcher at Embrapa Food Agroindustry and works mainly with high-pressure and thermal processes applied to the quality and safety of innovative products with greater sustainability of fruits, meat, dairy products, and fish.<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>Es licenciado en Ingenier\u00eda de Alimentos (1982) y tiene una maestr\u00eda en Ciencias de los Alimentos con enfoque en Nutrici\u00f3n (1988) por la Universidad Estatal de Campinas (Unicamp), un doctorado en Ingenier\u00eda y Tecnolog\u00eda de Alimentos por la Universidad de Reading (Inglaterra, 1996) y un posdoctorado de Agrosup Dijon (Francia). Currently, he\/she is a Professor at the Federal Rural University of Rio de Janeiro, working in the field of Food Engineering. His\/Her research, teaching, and advising activities focus on Food Science and Technology, with an emphasis on mathematical modeling applied to food processes and systems, bioactive compounds and antioxidant capacity, food extrusion, cereal science and technology, post-harvest of fruits and vegetables, sensory analysis, and shelf-life modeling and prediction, among other applied topics in the field.<\/h3>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\">Es graduado en Ingenier\u00eda de Alimentos por la Universidad Nacional Agraria de la Selva, Per\u00fa (1998), y posee una maestr\u00eda (2014) y un doctorado (2018) en Ciencia y Tecnolog\u00eda de Alimentos por la Universidad Federal Rural de Rio de Janeiro (UFRRJ).
